Chicken thigh marinated overnight in our own peri-peri — African bird's eye, lemon, garlic, a bit of paprika — then flame-grilled and finished with charred red pepper. Served on cauliflower rice cooked in stock with onion and coriander, plus a lemon-herb yoghurt on the side.
